Diacetyl - Food Flavoring Toxic Exposure
Studies have shown a link between obstructive lung disease and a chemical used in artificial butter flavor called Diacetyl. This lung disease has been identified as bronchiolitis obliterans (also known as popcorn lung), which is a rare condition that normally occurs very sporadically. However, in employees who have worked with food flavoring chemicals or at food flavoring manufacturing plants, the rate of incidence is much higher than the norm.
Diacetyl is known in the food industry as an additive that tastes like butter. It is used most commonly in microwave popcorn, but it appears in other staples such as baked goods and white wine. There are no regulations governing production, storage or usage of Diacetyl at this time.
Bronchiolitis obliterans is often initially misdiagnosed as asthma, bronchitis, COPD, emphysema or pneumonia. Shortness of breath is the primary symptom. A lung function test (spirometry) showing reduced lung capacity should be followed by lung biopsy for a definitive diagnosis. A biopsy could reveal inflammation and scarring in the airways more clearly than would be seen via CT scan, chest x-ray or MRI.
Cases of bronchiolitis obliterans have not yet been identified in consumers of microwave popcorn and other products containing Diacetyl.
